    Glad you liked them. The "Steak & Eggs" will be ready on Monday. Still seasoning: cajun eggs, sausage, chili-jalapeno eggs, and ginger-mustard carrots. BTW, Drew, I used you suggestion and baked the eggs in a cupcake pan. Worked out just fine.

    When I canned the chili-jalapeno eggs, the seasoning is just suspended, not dissolved. As a result, I've got a really unattractive sludge in jar that needs to be tumbled regularly to distribute the spices. When I canned the carrots I made a spice pouch out of a coffee filter. It seems to be working fine, and the brine remains clear and beautiful.
