One of my favorites is the staircase scene in the second Matrix movie.
I really love Bruce Lee's stuff, so if I thought about it, I'd probably have to throw something of his in there, too. Like this one (though the ending is little cheesy):

Ah yeah, Bruce Lee. I love his stuff. Preferably the ones that have as little of a plot as possible (terrible acting!). Just the fight scenes please.
